能登半島奥能登地方で古くから伝わるいかを丸ごと発酵させた魚醤。がつんとした旨味は煮物、炒飯、自家製キムチ作りに大活躍かも♪  

「いしり」とは能登半島奥能登地方で古くから伝わる魚醤の呼称で、新鮮なイカを1年以上もじっくり熟成・発酵させた液体調味料なので旨味たっぷり。カモシカでは、「魚醤ラーメン」のスープで使っています。

能登小木港特産のイカで作られるこちらのいしりは、冬の寒い時期にイカの内臓と塩をよく混ぜ合わせ、タンクに漬込み、その後何度か攪拌を繰り返しながらじっくり製造されたもの。そのため、イカの風味が充分に沁みこんだ芳醇な風味が味わえます。

大根や小芋を炊く時に醤油がわりに使ったり、キムチを仕込む時にアミの塩辛やイカの塩辛の代わりに使ったり、台所に一本あると料理の味付けがぐんと深まるかも♪
