柚子香る、上品な甘み　　

冬場の限られた時期だけ、カモシカの発酵8種定食のお豆腐の上にちょんとのせて提供している「柚子みそ」。
柚子の時期にしか仕込めないこの「柚子みそ」を、今年も特別販売します。

「みそ」と名前がついているものの味噌は使っておらず、醤油、麹を合わせて発酵させたもの。
柚子の香りを生かして、きび砂糖の優しい甘みで仕上げました。

お豆腐やご飯にのせたり、大根の煮物に添えたり、焼いたお肉にのせたり。
柚子の風味が加わるだけで、食卓が一気に華やぐかも♪
